The Chairman in Hong Kong was named No. 1 in Asia's 50 Best Restaurants 2026 when the list was announced on 25 March. It is the restaurant's second time at the top and its first return to that position since 2021. Wing, also in Hong Kong, placed second, while Gaggan in Bangkok completed the top three.
The Chairman is known for Cantonese cooking that favors clarity over spectacle. Chef-restaurateur Danny Yip and head chef Kwok Keung Tung build dishes around carefully sourced ingredients, precise timing, and a less-is-more approach. Their work demonstrates that innovation can come from looking more closely at a tradition instead of replacing it.
This matters beyond restaurant rankings. Cantonese kitchens have long treated texture, freshness, heat control, steaming, roasting, and the natural character of ingredients as central disciplines. A gentle technique can be demanding because there is nowhere for an overcooked fish, muddy stock, or poorly balanced sauce to hide.
The practical home lesson is restraint. Use fewer ingredients when each one has a clear role. Prepare the sauce before the pan gets hot. Steam until just done, rest roasted meat before cutting, and taste for balance rather than volume. A dish can feel modern without abandoning the knowledge that made it possible.
