Smyth in Chicago has taken the No. 1 position in North America's 50 Best Restaurants 2026. The list was published on 28 May and represents the second edition of the regional ranking. Smyth's cooking is led by John and Karen Urie Shields, whose work connects precise technique with the seasons and flavors of the Midwest.
Eight in Calgary placed second and received the Highest New Entry Award. Restaurant Pearl Morissette in Lincoln, Ontario, took third place, followed by Dakar NOLA in New Orleans and Mon Lapin in Montreal. The top five alone stretches from an eight-seat chef's table to farm-based cooking, Senegalese-Louisiana flavors, and relaxed Montreal small plates.
Look beyond the order and a broader pattern appears. Many of the restaurants on the list treat local sourcing as a creative tool rather than a restriction. They combine regional produce with personal histories, migration, preservation, live fire, and techniques drawn from many culinary traditions. The result is not one definition of North American food but a collection of distinct voices.
A home kitchen can borrow the same logic on a smaller scale. Start with the best ingredient available nearby, then choose the technique that makes it most expressive. Preserve a short season, roast over high heat when you want char, or connect a local vegetable with a spice mixture from your family table. Identity often emerges from repeated, thoughtful choices rather than unnecessary complexity.
